I would be happy to share a recipe for a healthy Indian dish that is both nutritious and delicious: Masoor Dal.

Masoor Dal is a popular lentil dish in India that is made from red lentils and flavored with a blend of spices. Lentils are an excellent source of protein, fiber, and essential vitamins and minerals, making this dish a great addition to any healthy diet.

Ingredients:

  • 1 cup masoor dal (red lentils)

  • 3 cups water

  • 1 tsp. cumin seeds

  • 1 tsp. mustard seeds

  • 1 tsp. turmeric powder

  • 1 tsp. coriander powder

  • 1/2 tsp. red chili powder

  • 1/2 tsp. garam masala powder

  • 1 onion, chopped

  • 2 tomatoes, chopped

  • 3 cloves of garlic, minced

  • 1 inch piece of ginger, grated

  • 2 tbsp. oil

  • Salt, to taste

  • Fresh cilantro, chopped (for garnish)

Instructions:

Rinse the masoor dal thoroughly in a colander under running water until the water runs clear.

In a large pot, bring the water to a boil over high heat. Add the masoor dal to the pot and reduce the heat to medium-low. Let the dal simmer for 20-25 minutes until it is tender and fully cooked.

In a separate pan, heat the oil over medium heat. Once the oil is hot, add the cumin seeds and mustard seeds to the pan. Let them cook for 1-2 minutes until they start to splutter.

Add the chopped onion to the pan and sauté for 2-3 minutes until it turns translucent. Add the minced garlic and grated ginger to the pan and sauté for an additional minute.

Add the chopped tomatoes to the pan and let them cook down for 5-7 minutes until they are soft and pulpy.

Add the turmeric powder, coriander powder, red chili powder, and garam masala powder to the pan. Stir the spices into the tomato mixture and let everything cook together for 2-3 minutes.

Add the cooked masoor dal to the pan with the tomato mixture. Stir everything together until the dal is fully coated in the spice mixture.

Let the dal simmer for an additional 5-7 minutes to let the flavors meld together. Add salt to taste.

Serve the Masoor Dal hot, garnished with chopped fresh cilantro if desired.

Tips:

  • You can add more water to the dal if it is too thick for your liking.

  • This dish can be served as a main course with rice or as a side dish with other Indian dishes.

  • To make the dish even healthier, you can add chopped spinach or other leafy greens to the dal while it is cooking.
