To prepare this healthy recipe we need Ingredients:

  • 1 cup quinoa

  • 1 can black beans, rinsed and drained

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 small red onion, diced

  • 1 jalapeno pepper, seeded and finely chopped

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons lime juice

  • 1 tablespoon red wine vinegar

  • 1 garlic clove, minced

  • Salt and freshly ground black pepper

Instructions:

  • Rinse the quinoa in a fine mesh strainer and place it in a medium saucepan with 2 cups of water. Bring to a boil over high heat, then reduce the heat to low and cover the saucepan with a lid. Simmer for 15 to 20 minutes, or until the quinoa is tender and the water is absorbed. Remove the saucepan from the heat and let it sit for 5 minutes. Fluff the quinoa with a fork.

  • In a large bowl, combine the cooked quinoa, black beans, bell peppers, red onion, jalapeno pepper, and cilantro.

  • In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, and garlic. Season with salt and black pepper to taste.

  • Pour the dressing over the quinoa and black bean mixture and toss to combine.

  • Serve immediately, or cover and refrigerate for up to 2 days.
